Truffle Pizza with Mascarpone and White Truffles

INGREDIENTS

Dough – makes 10 pizzas, freeze remaining dough:
1 package dry yeast
1¼ cups warm water
1 tablespoon agave nectar, sugar, or honey
1 tablespoon olive oil
1 teaspoon salt
9 cups Better for Bread flour

Filling:
½ cup Mascarpone cheese
1½ cups Parmesan cheese
2 tablespoons truffle oil
½ teaspoon truffle salt

Topping:
¼ pound Jack cheese, thinly sliced
¼ pound Muenster cheese, thinly sliced
¼ pound Mozzarella cheese, thinly sliced
¼ pound brie cheese or truffle cheese, hard crust removed, sliced as thinly as you can
¼ ounce Alba white truffle, thinly sliced, optional

For Filling, combine all ingredients. Set aside and let rest 5 minutes.


For Dough, sprinkle yeast over warm water, agave nectar, olive oil, salt and dissolved yeast. Place flour in bowl and mix in yeast mixture. Knead and cover in clear bowl. Let rise 1 hour.


Preheat pizza stone to 500 degrees. Roll Pizza Dough very thin. Place on a pizza peel. Cover with mascarpone mixture and cheeses. Bake 10 minutes. Place truffle over. Serve and enjoy!
